1/4 pineapple

5–6 okra

1 handful bean sprouts

1–2 chilies, sliced (to taste)

30g ripe tamarind

1–2 tbsp fish sauce

1–2 tbsp sugar (adjust to taste)

500–700ml water (or fish stock for best flavor)

Herbs: sawtooth herb, rice paddy herb, Thai basil

Minced garlic + fried garlic

Cooking Instructions

Step 1: Prepare the Tamarind Sour Base

Marrow the ripe tamarind in a bit of hot water, then strain for the juice.

Bring water (or fish stock) to a boil, then add the tamarind juice and a little sugar to create a balanced sweet and sour broth.

Step 2: Add Vegetables

Add the pineapple first to extract its natural sweetness.

Next, add the tomatoes and okra, and cook for about 2-3 minutes.

Step 3: Add Alaskan Halibut

Gently drop the Alaskan Halibut pieces into the simmering broth.

Cook for another 5 minutes until the fish is just cooked through (do not overcook to maintain sweetness and firm texture).

Step 4: Finish
