Ingredients

2 Alaskan halibut fillets (about 200-250g, thawed if frozen)

2 tbsp all-purpose flour

1 avocado (ripe, peeled, thinly sliced)

1 tbsp sour cream

1 carrot (julienned)

6-8 cherry tomatoes (halved)

2 tortillas (medium size)

1 handful of lettuce (washed and drained)

2 tbsp shredded cheese (cheddar or preferred type)

1/2 tsp salt

1/4 tsp black pepper

2 tbsp olive oil

Dipping sauce ingredients (optional):

1 tbsp fish sauce

1 tbsp water

1 tsp sugar

1 tsp lime juice

1/2 tsp minced garlic

1/4 tsp chopped chili (optional, adjust to taste)

Instructions

Prepare the halibut:

Thaw the halibut fillets in the refrigerator or in cold water for about 20 minutes. Rinse and pat dry with paper towels.

Season the fillets with 1/2 tsp salt and 1/4 tsp black pepper, then lightly coat with flour for a crispy texture when pan-fried.

Cook the halibut:

Heat 2 tbsp olive oil in a skillet over medium heat.

Pan-fry the halibut fillets for 2-3 minutes per side until golden and crispy on the outside, with tender flesh inside.

Let the fillets cool slightly, then slice into thin strips (about 6-8cm long).

Prepare the vegetables and tortillas:

Wash the lettuce, carrot, and cherry tomatoes. Julienne the carrot and halve the cherry tomatoes.

Slice the ripe avocado into thin slices.

Warm the tortillas in a dry skillet for 10-15 seconds per side to make them soft and pliable.

Assemble the taco rolls:

Place a tortilla on a clean surface, layer with lettuce, julienned carrot, avocado slices, cherry tomatoes, and halibut strips.

Sprinkle with shredded cheese and add a dollop of sour cream.

Fold the tortilla in half or roll lightly to hold the ingredients together.

Make the dipping sauce (optional):

Mix fish sauce, water, sugar, lime juice, minced garlic, and chili in a small bowl. Adjust to taste.

Serve and enjoy:

Arrange the taco rolls on a plate, garnishing with extraLettuce or cherry tomatoes if desired.

Serve with the dipping sauce (if using) and enjoy fresh.
