Ingredients:
4 pieces of pollock fillet, approximately 150g each
2 tablespoons of olive oil
2 tablespoons of fresh lemon juice
1 tablespoon of minced garlic
1 teaspoon of chili powder
1/2 teaspoon of salt
1/4 teaspoon of black pepper
Herbs of your choice (cilantro, mint, lime leaves...)
Directions:
Rinse the pollock with cold water and pat dry with paper towels.
Mix together the olive oil, lemon juice, minced garlic, chili powder, salt, and black pepper.
Brush the fish with the mixture, both on top and bottom.
Let the fish rest for 15 minutes to absorb the flavors.
Preheat the oven to 200°C and bake the fish for about 20-25 minutes or until the fish is cooked through and the meat is white.
Sprinkle herbs on top of the fish for garnish before serving.
