1 teaspoon minced ginger

6 fresh betel leaves
3 tablespoons tempura flour
4 tablespoons water

Instructions
1️⃣ Prepare the Ingredients
Pat dry the black cod fillets with a paper towel.
Season both sides with salt and black pepper. Let them rest for 5 minutes.
Wash and dry the betel leaves.
Mix tempura flour with water to form a light batter.
2️⃣ Make the Spicy Sauce
In a small bowl, combine soy sauce, chili sauce, rice vinegar, brown sugar, ginger, garlic, chili powder, and sesame oil.
Heat the mixture in a pan over low heat for about 3 minutes, stirring occasionally until slightly thickened.
3️⃣ Fry the Betel Leaves
Dip each betel leaf into the tempura batter.
Fry in hot oil until crispy and golden brown.
Remove and place on paper towels to drain excess oil.

Place the black cod skin-side down and sear for 3-4 minutes until the skin is golden and crispy.
Flip and cook for another 2-3 minutes until the inside is just cooked through.
