1.Sear the Black Cod:

Place the cod in the pan, skin-side down. Sear for 4-5 minutes until the skin is golden and very crispy. Carefully flip the fish and cook for another 2-3 minutes until cooked through. Remove the fish to a warm plate and let it rest.
2.Sauté the aromatics:
In the same skillet (keeping the flavorful fish oils), reduce the heat to medium. Add the unsalted butter, diced shallots, and minced garlic. Sauté for 1-2 minutes until softened and fragrant. Be careful not to burn the garlic, as it will turn bitter.
3.Simmer the brothy beans:
Pour the white wine into the skillet to deglaze it, using a wooden spoon to gently scrape up any browned bits from the bottom. Let it reduce for about 2 minutes. Add the chicken stock, drained butter beans, and fresh thyme sprigs. Bring to a gentle simmer and let it cook for 5-7 minutes so the beans absorb the flavors.
