Preparation and cooking time:
Preparation time: 30 minutes
Cooking time: 15 minutes
Serves: 2 people
Ingredients:
200g frozen Sockeye salmon fillet
2 tablespoons soy sauce
2 tablespoons olive oil
1 tablespoon hot honey (or regular honey)
1 tablespoon brown sugar
2 teaspoons minced garlic
1 teaspoon black sesame seeds (may add more)
1 bunch scallions (at least 8 scallion stalks), chopped
2 teaspoons sesame oil
½ teaspoon kosher salt, may add more for taste
Instructions:
First, preheat the oven to 230°C.
Mix the soy sauce, olive oil, honey, brown sugar, garlic, and black sesame seeds in a small bowl.
Thaw the frozen Sockeye salmon fillet under cold running water and pat dry with a paper towel. Place the salmon on a baking sheet lined with parchment paper (place skin side down if using a skin-on fillet), pour the sauce mixture on top, and wrap with parchment paper.
Brush sesame oil and sprinkle a little salt on the scallions, then layer them evenly on a separate baking sheet.
Put the salmon fillet and scallions in the oven and bake for about 8 minutes. Remove the parchment paper from the salmon and flip the scallions, then put them back in the oven and bake for another 6 minutes. Take out the scallions, which should be crispy and slightly charred on the edges. Flip the salmon fillet again and bake for another 2-4 minutes, depending on the thickness of your fillet. The salmon is done when the meat is opaque and flakes easily with a fork.
Serve the salmon on a bed of scallions and sprinkle with black sesame seeds.
Sockeye Honey-soy Salmon with scallions will be a dish that scallion lovers can't resist. The tender, juicy salmon with the sweet and tangy honey sauce will create a rich flavor without being too heavy. Along with the crispiness of the scallions, this dish is a perfect balance of flavors and textures. Enjoy!
