Ingredients

Main ingredients:

1 fillet of wild sockeye salmon (280–400g), fresh and cleaned

1 ripe mango, sliced thinly (~0.6cm)

1 Roma tomato, diced

1/2 red onion, finely chopped

1/4 bunch cilantro, chopped

1 tbsp butter (optional, for richness)

1/4 tsp chili powder

1 lime

Olive oil, salt, pepper

Instructions

Step 1: Prepare the salmon

Pat the salmon dry with paper towels and place it on a large sheet of foil.

Drizzle with olive oil and season with salt.

Layer the mango slices evenly over the salmon fillet.

(Optional) Add a few small pieces of butter on top for extra flavor.

Step 2: Grill the salmon

Fold the foil edges over the fish to seal completely, creating a pouch.

Preheat the oven or grill to 220°C (425°F).

Cook the salmon for 8–12 minutes, depending on the thickness, until the fish is tender and flaky.

Step 3: Make the topping

In a small bowl, mix together the diced tomato, chopped red onion, cilantro, juice of 1/2 lime, chili powder, olive oil, salt, and pepper.

Stir well and set aside.

Step 4: Assemble the dish

Carefully remove the salmon from the oven and open the foil.

Transfer the salmon to a serving plate and spoon the fresh topping over it.

Finish with a squeeze of lime juice for brightness.
