1/4 teaspoon black pepper

1 tablespoon olive oil

For the Creamy Mushroom Sauce:

50g unsalted butter

2 cloves garlic, minced

200g mushrooms (button, shiitake, or king oyster), chopped

1/2 teaspoon salt

1/2 tablespoon oyster sauce

80ml whole milk

50ml heavy cream (whipping cream)

1/4 teaspoon black pepper

For Serving:

150g asparagus

2 slices of lemon for garnish

Instructions

1️⃣ Prepare the Ingredients

Pat the salmon dry with a paper towel, then season both sides with salt and pepper. Let it sit for 5 minutes.

Wash and chop the mushrooms.

Trim off the tough ends of the asparagus.

2️⃣ Make the Creamy Mushroom Sauce

Heat a pan and melt the butter.

Add minced garlic and mushrooms, sauté until slightly golden.

Season with salt and oyster sauce, then pour in the milk.

Lower the heat, add heavy cream, and stir until the sauce thickens.

Sprinkle with black pepper for extra aroma.

3️⃣ Sear the Salmon

Heat olive oil in a pan over medium heat.

Place the salmon skin-side down and sear for 3-4 minutes until crispy.

Flip and cook for another 2-3 minutes until just cooked through.

4️⃣ Sauté the Asparagus

In the same pan, add a bit more olive oil and sauté the asparagus for 2-3 minutes until tender-crisp.

5️⃣ Assemble the Dish

Arrange the asparagus and salmon on a plate.

Spoon the creamy mushroom sauce over the salmon.

Garnish with lemon slices.
