Total Time: 40 minutes

Servings: 4 people

4 pieces of salmon (approximately 150g/piece)

1/2 cucumber

1 orange

1 banana

1/2 tomato

1/2 onion

1/2 carrot

2 tablespoons of olive oil

1/4 teaspoon of salt

1/4 teaspoon of pepper

1/4 of a lime

Fresh herbs (coriander, mint) for garnish

Start by making the fruit salsa by washing, peeling, deseeding, and cutting the cucumber, orange, banana, tomato, onion, and carrot into small pieces.

Put all the chopped fruits and vegetables in a large bowl. Add salt, pepper, olive oil, and lime juice, then mix well.

Spread the fruit salsa on a wide, flat dish and let it cool in the refrigerator for at least 30 minutes.

Heat up a pan over high heat, then add a tablespoon of olive oil to the pan.

Place the salmon pieces in the pan, skin side up. Sprinkle salt and pepper on the salmon.

Fry the salmon for 3-4 minutes until the surface of the fish is golden brown, then flip it over and fry for another 2-3 minutes.

Once the salmon is cooked and evenly golden on both sides, remove it from the pan and let it drain on a paper towel.

Arrange the salmon on a plate, then drizzle the fruit salsa on top. Garnish with fresh herbs and serve immediately.
